Spinach Biryani

My mom makes a healthy delicious Spinach rice cooked with milk, which I am a big fan of. I love the flavor and aroma of Spinach. I frequently make this Spinach rice. For a slight variation, I experimented by adding lot of vegetables, pinch of biryani paste and prepared it with Olive Oil (I used Borges Extra light Olive Oil).

And this ended up heavenly. My husband loved it!! Of course, who wouldn't love it when it comes with an extra bonus of nutrients and lot of calcium.


Ingredients:

  • Chopped Spinach - 2 cups
      Choice of Vegetables: You can add any vegetables of your choice and I used below.
  • Chopped Onion - 1/4 cup
  • Chopped Potato - 1/4 cup
  • Chopped Carrot - 1/4 cup
  • Chopped Tomatoes - 1/4 cup
      Spices:
  • Chopped Garlic cloves - 2 tbsp
  • Chopped Ginger - 2 tbsp
  • Cardamom - 2
  • Cloves - 2
  • Cinnamon - 2 (1/2 inch piece)
  • Bay leaf - 1
  • Biryani paste - 1/4 tbsp
  • Rice - 1/2 cup
  • Milk - 1/2 cup
  • Water - 1/4 cup
  • Olive Oil - 2 Spoons ( I used Borges Extra Light Olive Oil since we need to saute for a minute)
  • Salt - to taste 

Procedure:
  1. Boil 4 cups of water, add spinach and keep it for a minute. Drain the water and cool it.
  2. When cooled grind it to a smooth paste after adding chopped garlic and ginger.
  3. Take a pressure cooker and add cardamom, cloves, cinnamon, bay leaf and saute it for few seconds with 2 spoons of olive oil. Add chopped onions and saute it for few more seconds and finally add rest of the vegetables and saute it for a minute.
  4. Now add the spinach paste, biryani paste, milk and water. Bring it boil. It takes approximately 2 mins. 
  5. Add salt to taste and pressure cook for 3 whistles and switch it off. 
  6. Serve it hot. 
It's heaven. You will fall in love with the color and aroma of Spinach.

You can serve this with raitha too!!
