Spinach Biryani

My mom makes a healthy delicious Spinach rice cooked with milk, which I am a big fan of. I love the flavor and aroma of Spinach. I frequently make this Spinach rice. For a slight variation, I experimented by adding lot of vegetables, pinch of biryani paste and prepared it with Olive Oil (I used Borges Extra light Olive Oil).

And this ended up heavenly. My husband loved it!! Of course, who wouldn't love it when it comes with an extra bonus of nutrients and lot of calcium.


Ingredients:

  • Chopped Spinach - 2 cups
      Choice of Vegetables: You can add any vegetables of your choice and I used below.
  • Chopped Onion - 1/4 cup
  • Chopped Potato - 1/4 cup
  • Chopped Carrot - 1/4 cup
  • Chopped Tomatoes - 1/4 cup
      Spices:
  • Chopped Garlic cloves - 2 tbsp
  • Chopped Ginger - 2 tbsp
  • Cardamom - 2
  • Cloves - 2
  • Cinnamon - 2 (1/2 inch piece)
  • Bay leaf - 1
  • Biryani paste - 1/4 tbsp
  • Rice - 1/2 cup
  • Milk - 1/2 cup
  • Water - 1/4 cup
  • Olive Oil - 2 Spoons ( I used Borges Extra Light Olive Oil since we need to saute for a minute)
  • Salt - to taste 

Procedure:
  1. Boil 4 cups of water, add spinach and keep it for a minute. Drain the water and cool it.
  2. When cooled grind it to a smooth paste after adding chopped garlic and ginger.
  3. Take a pressure cooker and add cardamom, cloves, cinnamon, bay leaf and saute it for few seconds with 2 spoons of olive oil. Add chopped onions and saute it for few more seconds and finally add rest of the vegetables and saute it for a minute.
  4. Now add the spinach paste, biryani paste, milk and water. Bring it boil. It takes approximately 2 mins. 
  5. Add salt to taste and pressure cook for 3 whistles and switch it off. 
  6. Serve it hot. 
It's heaven. You will fall in love with the color and aroma of Spinach.

You can serve this with raitha too!!

Watermelon Juice

Watermelon juice is not only delicious but also nutritious and absolutely a refreshing drink. It tastes great when combined with pinch of ginger and lemon juice.






















Ingredients:
  • Watermelon - 1/2 of small sized watermelon
  • Lemon - 1/2
  • Ginger - 1 inch piece


Procedure:
  1. Juice all the ingredients except lemon in a juicer. I used Philips 1861 model
  2. Make sure the pulp is completely removed. Of course, the juicer I used takes care of the pulp.
  3. Add lemon before serving.
  4. Serve it on rocks.

Detox Drink

High fiber root veggie carrot when combined with apple, pinch of ginger and lemon makes an excellent detox drink which is good for the digestive tract. Of course, it tastes fantastic!!



Ingredients:
  • Apples - 2
  • Carrots - 4
  • Lemon - 1/2
  • Ginger - 1 inch piece
Procedure:
  1. Juice all the ingredients except lemon in a juicer. I used Philips 1861.
  2. Make sure the pulp is completely removed. Of course, the juicer I used takes care of it.
  3. Add lemon before serving.
  4. Serve it on rocks.

Vegetable Brown Rice - GM Diet Day 6 Brown Rice with Vegetables

GM Diet Day 6 is easy for Vegans who should consume Brown rice or chick peas or Soya chunks or red beans which are substitutes for Beef, along with vegetables (lots of greens)


Need to consume mixed vegetables on this day.

So I prepared vegetable soup and vegetable brown rice where I can consume vegetables in large quantity.

Since on Day 5 I had tomato brown rice, I had recipe of this in my mind and easily prepared and loved it very much.


Ingredients:
  • Chopped Garlic cloves - 2 tbsp
  • Chopped Onion - 1/4 cup
  • Chopped Spinach - 1/4 cup
  • Chopped Carrot - 1/4 cup
  • Chopped Tomatoes - 1/4 cup
  • Chopped Cabbage - 1/4 cup
  • Green Peas - 1/4 cup
  • Chopped Green Pepper - 2 tbsp
  • Brown rice - 1/4 cup (since you need to consume 1 cup brown rice)
  • Olive Oil - 1 Spoon ( I used Borges Extra Light Olive Oil since we need to saute for a minute)
  • Salt - to taste (Not as per our normal levels. Decrease it as much as you can when you are on GM diet)
Procedure:
  1. Take the pressure cooker and add 1 spoon of olive oil, add garlic cloves, green pepper, onions and all the vegetables and saute it for a minute.
  2. Now add the water and pressure cook for 3 whistles and switch off. Don't add salt while cooking.
  3. Now add salt and pepper (if desired) and mix it well.
  4. Serve it hot. It tasted delicious.

Tomato Brown Rice - GM Diet Day 5 Brown Rice with Tomatoes

GM Diet Day 5 is bit tough for Vegans who should consume Brown rice or chick peas or Soya chunks or red beans which are substitutes for Beef, along with tomatoes


Need to consume around 6-8 tomatoes on this day which is bit difficult.

So I prepared tomato soup and tomato brown rice where I can consume tomatoes as well as I can get on with Day 5 with no problem what so ever.

I never liked the taste of brown rice but this ended up heavenly. Very easy recipe. You will definitely love eating it.


Ingredients:
  • Medium Tomatoes - 2
  • Medium Onion - 1
  • Brown rice - 1/3 cup (since you need to consume 1 cup brown rice)
  • Garlic Cloves - 2
  • Olive Oil - 1 Spoon ( I used Borges Extra Light Olive Oil since we need to saute for a minute)
  • Salt - to taste (Not as per our normal levels. Decrease it as much as you can when you are on GM diet)
Procedure:
  1. Cook the brown rice and keep it aside.
  2. Take a pan and add 1 spoon of olive oil, chopped garlic cloves, chopped onions and saute it for a min.
  3. Now add the chopped tomatoes and cover the lid. Simmer it for 5 mins until they turn juicy. Add water if desired.
  4. Add brown rice and mix it well. Again saute it for 2 more mins.
  5. Delicious tomato brown rice is ready. You can add pepper if desired. 
  6. I never thought I can have brown rice. But I loved it after tasting it.

Tomato Soup - GM Diet Day 5 Soup - Low Calorie Soup


GM Diet Day 5 is bit tough for Vegans who should consume Brown rice or chick peas or Soya chunks or red beans which are substitutes for Beef, along with tomatoes


Need to consume around 6-8 tomatoes on this day which is bit difficult.

So I prepared tomato soup where I can consume tomatoes as well as I can get on with Day 5 with no problem what so ever.

Very easy recipe and tastes good when compared with tomatoes eating alone.


Ingredients:
  • Big Tomatoes - 5
  • Garlic Cloves - 5
  • Salt - to taste (Not as per our normal levels. Decrease it as much as you can when you are on GM diet)
Procedure:
  1. Pressure cook the tomatoes for 5 mins along with garlic cloves and a little water. Don't add salt. You will end up consuming more which is not advisable if you are on GM Diet.
  2. Let it cool and blend them into a thick paste. (If desired, or you can have the soup with chopped tomatoes version)
  3. Take the thick paste in a bowl and add necessary water for soup consistency, add salt and simmer it again for 5 mins.
  4. Serve it hot. You can add pepper if desire.
  5. After have two glasses of water if you are on GM Diet.
  6. It tastes heavenly. You will love the soup especially when you don't like eating raw tomatoes.

Vegetable Soup - GM Diet Wonder Soup - Low Calorie Soup

From Day 4 of GM Diet, you can consume vegetable soup as many times as possible.


Along with ingredients of GM Diet Wonder Soup recipe, I combined spinach, garlic and carrots in the recipe and tasted heavenly when pepper and salt are added.

I liked it very much that I wanted to include in my daily routine. Healthy as well as tasty.


Ingredients:
  • Spinach - 1/2 bunch
  • Big Onion- 1
  • Big Tomatoes - 3
  • Cabbage - 1/4
  • Carrot - 2
  • Garlic Cloves - 5
  • Green Pepper - 1
  • Salt - to taste (Not as per our normal levels. Decrease it as much as you can when you are on GM diet)
Procedure:
  1. Pressure cook all the vegetables for 10 mins along with green pepper and garlic cloves until they get cooked. Don't add salt. You will end up consuming more which is not advisable if you are on GM Diet.
  2. Let it cool and blend all the ingredients into a thick paste. (If desired, or you can have the soup with chopped vegetables version)
  3. Take the thick paste in a bowl and add necessary water for soup consistency, add salt and simmer it again for 5 mins.
  4. Serve it hot. You can add pepper if desire.
  5. After have two glasses of water if you are on GM Diet.s
  6. It tastes heavenly. You will love all the combinations of vegetables.
